  • 100 g almonds

  • 300 g caster sugar
  • 6 cardamom pods, gently crushed
  • ½ lemon, thin peelings of skin only
  • ½ orange, thin peelings of skin only
  • 800 g quince (approx. 4), peeled, cut in eights and cores removed
