  • 3 large eggs
  • 80 g brown sugar
  • 50 g whole milk
  • 100 g plain flour
  • 250 g almond flour
    or 250 g chestnut flour
  • 1 tsp baking powder
  • 100 g almonds

Poached Quince

  • 400 g water
  • 250 g sweet Marsala wine
  • 300 g caster sugar
  • 6 cardamom pods gently crushed
  • ½ lemon thin peelings of skin only
  • ½ orange thin peelings of skin only
  • 800 g quince (approx. 4), peeled, cut in eights and cores removed
