  • 650 - 750 g chicken thigh fillets, cut into pieces (3-4 cm)
  • ½ tsp ground black pepper

  • 150 g brown onion, cut into halves
  • 2 garlic cloves
  • 2 - 3 fresh chillies, trimmed and deseeded if preferred
  • 2 tsp ground coriander
  • 2 tsp ground cumin
  • 40 g oil
  • 1 tomato, cut into quarters
  • 50 g tomato paste
  • 50 g raisins
  • 100 g pimento stuffed olives
  • olive oil spray, for greasing
  • 18 mini tortillas
  • 150 g sour cream, to serve
  • 4 - 5 sprigs fresh coriander, leaves only
  • ¼ iceberg lettuce, shredded
