Ingredients

Pizza dough

  • 250 g spelt flour
  • 250 g plain flour
  • 280 g warm water
  • 2 tsp dried instant yeast
  • 20 g olive oil, plus extra for greasing
  • 1 ¼ tsp salt
  • 1 pinch white sugar

Roast beef and mushroom topping

  • 1 garlic clove
  • 300 g sour cream
  • 1 ¼ tsp salt
  • ¾ tsp ground black pepper
  • 350 g roast beef, cut into thin strips (approx. 2 x 5 cm)
  • 30 g whiskey
  • 25 g honey
  • 2 tsp sweet paprika
  • ½ tsp hot paprika
  • 250 g fresh brown mushrooms, cut into slices
  • 1 tbsp olive oil
  • 1 ½ tsp dried thyme
  • ¾ tsp grated lemon zest, no white pith
  • 2 spring onions/shallots, trimmed and cut into very thin slices
  • 50 g Parmesan cheese, shaved
