Ingredients

Tofu feta

  • 300 g firm tofu, pressed and cut into pieces (approx. 2 cm - see Tips)
  • 60 g lemon juice
  • 120 g filtered water
  • 120 g apple cider vinegar
  • 1 tbsp dried oregano
  • ½ tsp salt

Freekeh and broad bean salad

  • 2 sprigs fresh mint, leaves only
  • 1 sprig fresh flat-leaf parsley, leaves only
  • 2 sprigs fresh coriander, leaves only
  • 100 g freekeh
  • 1000 g filtered water
  • 1 tsp stock paste (see Tips)
  • 200 g frozen broad beans
  • 2 baby cos lettuce, cut into slices (1.5 cm)
  • 2 tsp preserved lemon rind, finely diced
  • 1 tbsp lemon juice
  • 1 - 2 pinches salt
  • 1 - 2 pinches ground black pepper
