Chilli Sesame Sauce

  • 4 garlic cloves
  • 100 g sesame oil
  • 100 g red miso (or akamiso)
    or vegetable stock paste
  • 40 g sesame seeds
  • 15 g chilli paste
  • 2 spring onions, cut in pieces
  • 1 fresh red chilli

Pork Belly with Noodles

  • 120 g onions, cut in wedges
  • 75 g fresh root ginger, peeled, cut in round slices (2 mm)
  • 10 g black peppercorns
  • 5 garlic cloves
  • 2 fresh red chillies, halved
  • 2 ½ chicken stock cubes (for 0.5 l each), crumbled
    or 2 ½ tsp chicken stock paste, homemade
  • 600 g pork belly, boned, skinless, cut in pieces (3 cm x 10 cm)
  • 1200 g water
  • 1 fresh lemon grass, bashed
    or 10 g dried lemon grass
  • 150 g dried ramen noodles
  • 1 Tbsp oil
