Ingredients

Bolognese Sauce

  • 200 g Parmesan cheese, cut in pieces (3 cm)
  • 100 g onions, quartered
  • 50 g celery, cut in pieces (3 cm)
  • 50 g carrot, cut in pieces (3 cm)
  • 40 g extra virgin olive oil
  • 400 g beef mince, broken in pieces
  • 400 g pork mince, broken in pieces
  • 100 g dry white wine
  • 400 g tinned chopped tomatoes
  • 5 g fresh rosemary leaves, roughly chopped
  • 1 heaped tsp dried oregano
  • 1 - 2 tsp fine sea salt, to taste
  • 1 ½ tsp ground black pepper

Béchamel Sauce

  • 1000 g milk
  • 80 g unsalted butter, diced, plus extra for greasing and topping
  • 100 g plain flour
  • 1 - 1 ½ tsp fine sea salt, to taste
  • 1 pinch ground nutmeg

Lasagne assembly

  • 18 dried lasagne pasta sheets (10 cm x 20 cm)
