  • 400 g medium raw prawns peeled and deveined
  • 20 g Japanese soy sauce
  • 10 g mirin
  • 1500 g water
  • 300 g fresh yakisoba noodles (see Tip)
  • 2 cm piece fresh ginger
  • 15 g sesame oil
  • 10 g red chilli oil
  • 1 medium onion cut into wedges
  • 1 red capsicum deseeded and cut into thin strips
  • 1 green capsicum deseeded and cut into thin strips
  • 40 g oyster sauce
  • ½ tsp garlic powder
  • 200 g fresh bean sprouts
  • sesame seeds toasted, to serve
