Ingredients

  • 50 g pine nuts
  • 60 g Parmesan cheese cut in pieces, plus extra shavings for serving
  • 1 garlic clove
  • 1 bunch carrot tops organic, clean (approx. 60-90 g), cut in pieces (2-3 cm)
  • 100 g olive oil
  • ¼ tsp ground black pepper
  • ¾ tsp salt plus extra to taste
  • 700 g water
  • 800 g carrots multicolour, organic and clean, unpeeled, spiralized in noodles (see tip)

  • 250 g cherry tomatoes halved
