Ingredients

  • 1 tsp white sugar
  • 2 tsp dried instant yeast
  • 400 g baker's flour
  • 1 tsp sea salt

Topping

  • extra virgin olive oil, to grease
  • 200 g mozzarella cheese, cut into pieces (3 cm)
  • 100 g yellow capsicum, cut in 1-2 wedges, seeds and membranes removed
  • 100 g red capsicum, cut in 1-2 wedges, seeds and membranes removed
  • 80 g white button mushrooms (approx. 5-6 mushrooms), whole, stem removed
  • 120 g red onion (1 small onion), peeled, cut into halves vertically
  • 100 g zucchini (approx. ½ zucchini), unpeeled, washed and trimmed
  • 200 g canned chopped tomatoes
  • sea salt, to season
  • ground black pepper, to season
