Ingredients

  • 2 tsp gingelly oil
  • 1 tsp mustard seeds
  • 1 tsp urad dhall
  • 1 tsp chana dhal, soaked for 20 minutes, drained
  • 2 sprigs curry leaves, deveined
  • ½ tsp ground turmeric
  • 1 pinch asafoetida
  • 1 tsp salt, adjust to taste
  • 20 g roasted peanuts, with skin, plus extra for garnishing
  • 20 g roasted cashew nuts, without skin, plus extra for garnishing
  • 450 g cooked rice (type Basmathi) (see tip)
  • 60 g lime juice
    or lemon juice
