Ingredients

Cumin Lime Dressing

  • 60 g olive oil
  • 60 g Parmesan cheese, cut into pieces
  • ¼ tsp ground black pepper
  • 1 tsp dried basil
  • 1 tsp dried oregano
  • 1 tsp cumin seeds
  • 1 tsp sugar
  • ½ tsp salt
  • ½ tsp onion powder
  • 30 g apple cider vinegar
  • 60 g lime juice
  • 15 g red bell pepper

White Bean Salad

  • 2 cans white bean, large (approx. 540 ml ea.), rinsed and drained
    or 2 cans black-eyed bean (approx. 540 ml ea.), rinsed and drained
  • 1 can canned sweet corn kernels (approx. 340 ml), drained
  • 140 g red onion, quartered
  • 140 g red bell pepper, cut into pieces (25 mm/1 in.)
  • 30 g cilantro, fresh, leaves and tender stems
  • 2 - 3 jalapeño chillies, canned, de-seeded and de-stemmed, to taste
