  • 2 tbsp icing sugar
  • ⅛ tsp salt

Creamy Balsamic Dressing

  • 100 g plain Greek yoghurt
  • 70 g balsamic vinegar
  • 30 g extra virgin olive oil
  • 1 tbsp Dijon mustard
  • 1 tbsp honey
  • ¼ tsp salt, to taste
  • ⅛ tsp ground black pepper, to taste

  • 85 g salad greens
  • 450 g watermelon, diced
  • 115 g English cucumber, thinly sliced half moons
  • 115 g feta cheese, crumbled or diced
  • 2 radishes, thinly sliced
  • 2 - 3 sprigs basil, fresh, leaves only, hand torn, plus extra, to garnish
  • 2 - 3 sprigs mint, fresh, leaves only, hand torn
