  • 30 g extra virgin olive oil
  • 130 g chickpea flour
  • 1 tsp baking soda
  • 1 tsp dried red chilli flakes
  • 1 tsp ground cumin
  • 1 tsp salt
  • 6 fresh mint leaves, plus extra to garnish (optional)
  • 680 g frozen green peas
  • vegetable oil, to fry
  • 1 - 2 lemon, cut into wedges, to serve
  • 570 g cherry tomatoes, halved
  • red onion, julienned, to taste
  • vegan mayonnaise, to serve
