Ingredients

  • 180 g long grain rice or jasmine rice
  • 1 tsp sea salt
  • 150 g chicken breast, sliced into strips
  • 2 tsp Chicken stock paste (see Tips)
  • 2 pinches ground white pepper
  • 1500 g water
  • 5 tsp sesame oil
  • 2 Chinese sausages (approx. 80 g), thinly sliced (see Tips)
  • 8 - 12 fresh shiitake mushrooms (100 g), halved if large
  • 1 spring onion/green onion, sliced, to garnish
  • 2 tbsp fried shallots, to garnish
  • red chilli oil, to drizzle (see Tips)
