Feta Cheese and Yoghurt Dip
- 1 garlic clove
- ½ fresh chilli, finely chopped (1 mm)
- 400 g feta cheese, in pieces (4 cm)
- 1 tsp sweet paprika powder
- 100 g Greek yoghurt
- 1 tbsp lemon juice
- 50 g olive oil, plus extra for sprinkling
- ¼ tsp freshly ground pepper
Risotto with Parmesan Cheese
- 40 g Parmesan cheese, cut in pieces (3 cm)
- 1 shallot (approx. 30 g)
- 40 g butter
- 10 g extra virgin olive oil
- 320 g risotto rice (e.g. Carnaroli, Arborio), 14-15 minutes cooking time (see tip)
- 60 g dry white wine
- 820 g water
