Green Miso Dressing
- 2 garlic cloves
- 1 inch fresh ginger peeled, sliced
- 2 spring onions trimmed and cut into thirds
- 4 oz fresh baby spinach
- 2 oz fresh cilantro leaves and tender stems
- 2 tbsp white miso (or shiro miso)
- 2 tsp sesame oil
- 2 oz freshly squeezed lemon juice

- 12 oz asparagus trimmed, halved lengthways and cut into halves
- 9 oz snow peas trimmed and julienned

- 2 Lebanese cucumbers trimmed, cut into halves and thinly sliced
- 1 spring onion thinly sliced
- 1 lemon cut into wedges, to serve
