Ingredients

Yellow Dumpling Wrappers

  • 2 oz carrots, cut into pieces
  • 3 oz water, divided
  • 2 ½ oz all-purpose flour, plus extra to dust
  • 1 pinch salt

Cabbage Dumplings

  • 5 ½ oz napa cabbage, diced (1 in.)
  • 4 oz carrots, cut into pieces (approx. 2 carrots)
  • ½ tsp salt, to taste
  • 2 ½ oz dried bean curd, broken into pieces
  • ½ oz dried mushrooms
  • ½ oz ginger, peeled, cut into pieces
  • 2 tsp sugar
  • 1 tsp black sesame oil
  • ¼ tsp ground white pepper
  • ½ tsp glutinous rice flour
  • 20 oz water

Pork Dumplings

  • ½ oz green onions, cut into pieces
  • 21 oz water, divided
  • 1 tsp oyster sauce
  • 1 tsp black sesame oil
  • ½ tsp chicken stock paste, to taste
  • 9 oz ground pork, broken into pieces
  • 20 store-bought dumpling wrappers (round)
  • ponzu sauce, to serve
  • fresh red chilies, sliced, to garnish
