  • 1 Tbsp ground black pepper
  • 1 Tbsp coriander seeds
  • 1 Tbsp cumin seeds
  • 1 Tbsp cloves
  • 1 cinnamon stick
  • 10 green cardamom pods

Chicken

  • 200 g onions, quartered
  • 50 g olive oil
  • 900 g water
  • 1 tsp fine sea salt
  • 300 g rice, rinsed
  • 700 - 800 g chicken breasts, skinless, cubed (2 cm)
  • 30 g pine nuts
  • 30 g blanched almonds
  • 30 g pistachio nuts, unsalted, shelled
  • 4 - 5 sprigs fresh coriander leaves, chopped, for garnishing
