  • 3 - 4 fresh sage leaves
  • 1 sprig fresh rosemary leaves only
  • 10 fresh chives cut in pieces (2 cm)
  • ½ - 1 tsp coarse sea salt to taste
  • ¼ tsp ground black pepper
  • 250 g unsalted butter soft

Vegetables and Steaks

  • 3 - 4 sprigs fresh rosemary leaves only
  • 30 g sunflower oil plus extra for brushing
  • 1 tsp fine sea salt
  • 1 tsp ground black pepper
  • 500 g potatoes peeled, cut in pieces (2 cm)
  • 500 g water
  • 400 g broccoli florets
  • 4 sirloin steaks (3.5 cm thick)
