Ingredients

  • 70 g cashews, dry roasted or activated, plus extra to serve (see Tips)
  • 180 g onion, cut into quarters
  • 100 g carrot, cut into pieces (3 cm - see Tips)
  • 50 g celery, cut into pieces (3 cm)
  • 40 g extra virgin olive oil, plus extra to serve
  • 600 g beetroot, washed, trimmed and cut into pieces (2-3 cm - see Tips)
  • 2 apple, unpeeled and cored; 1 cut into quarters, 1 cut into julienne, to serve
  • 550 g liquid chicken stock or bone broth (see Tips)
  • 50 g lemon juice
