  • 3 garlic cloves
  • ½ oz fresh parsley, leaves and tender stems
  • ½ tsp dried rosemary
  • ½ tsp dried thyme
  • 8 oz yellow onions, quartered
  • 5 oz sweet potatoes, in pieces (1 in.)
  • 4 oz carrots, in pieces (1 in.)
  • 4 oz celery, in pieces (2 in.)
  • 1 tsp salt, to taste
  • ⅛ tsp ground black pepper
  • 8 oz lean ground beef, in pieces
  • 8 oz ground pork, in pieces
  • 1 package brown gravy mix
  • 2 tsp tomato paste
  • 1 red bell pepper, diced
  • 14 ½ oz canned black beans, rinsed and drained
  • 14 ½ oz canned sweet corn, rinsed and drained

Cauliflower Topping

  • 20 oz water
  • 26 - 30 oz cauliflower florets
  • 1 ½ oz unsalted butter, cut into pieces
  • 1 ½ oz cream cheese, cut into pieces
  • 3 oz heavy whipping cream
  • 1 tbsp fresh cilantro leaves, chopped
  • 1 tsp salt, to taste
  • ⅛ tsp ground black pepper
