Ingredients

Panna cotta

  • 2 titanium strength gelatine leaves
  • cold water, to soak
  • 600 g pouring (whipping) cream
  • 30 g caster sugar
  • 2 orange peel strips (4 cm), peel only, no white pith
  • ½ cinnamon quill
  • 5 juniper berries, lightly crushed

Orange gin jelly

  • 2 titanium strength gelatine leaves
  • cold water, for soaking
  • 40 g caster sugar
  • 80 g gin of choice (see Tips)
  • 200 g orange juice, freshly squeezed (approx. 2 oranges)
  • 2 orange peel strips (4 cm) peel only, no white pith
  • ½ cinnamon quill
  • 4 juniper berries, lightly crushed
