  • 2 oz Dijon mustard
  • 16 oz French fries, frozen, shoestring cut
  • non-stick spray oil, to spray fries and fish (optional)
  • 16 oz cod fillets, thawed if frozen

  • 8 ½ oz extra virgin olive oil
  • 3 oz pickles, in pieces
  • 1 oz shallots, in pieces
  • 1 oz lemon juice
  • 1 tbsp capers, drained
  • 4 sprigs fresh dill fronds
  • ½ tsp salt
  • ⅛ tsp ground black pepper
  • 2 egg yolks, from large eggs
  • 1 lemon, cut into wedges
  • malt vinegar
