Ingredients

Salad

  • 150 g cucumber, unpeeled, ends removed
  • 180 g plum tomatoes, whole, ripe but firm
  • 350 - 400 g iceberg lettuce, thickest part of the core removed, cut in 3-4 wedges that fit in feeder (see tip)

Steamed Chicken

  • 600 g chicken breast, skin on or skinless, bone in or boneless
  • 2 - 3 garlic cloves, to taste
  • 1 ½ Tbsp smoked paprika
  • 1 Tbsp ground coriander
  • 30 g olive oil
  • 1 lemon, finely grated zest and 20 g juice
  • 1 tsp fine sea salt
  • ½ tsp ground black pepper
  • 500 g water

Finalisation

  • 40 g extra virgin olive oil
  • 30 g red wine vinegar
  • 2 tsp dried oregano
  • ½ tsp caster sugar
  • ¼ - ½ tsp fine sea salt, to taste
  • ¼ tsp ground black pepper
  • 70 - 100 g feta cheese, crumbled, to taste
  • 50 g Kalamata olives, pitted
