Ingredients

  • 300 g fresh lion's mane mushrooms, frozen, thawed
  • ¼ tsp ground turmeric
  • 2 tsp salt, plus extra 1 pinch for seasoning in step 5
  • 50 g vegetable oil
  • 5 garlic cloves
  • 5 g fresh ginger
  • 200 g onions, cut in quarters
  • 200 g tomatoes, cut in quarters
  • 30 g ghee
  • 1 cinnamon stick
  • 1 star anise
  • 2 dried bay leaves
  • 2 sprigs curry leaves, deveined
  • 1 tbsp chilli powder
  • ½ tsp garam masala
  • ½ tsp cumin powder
  • ½ tsp black pepper powder
  • 2 tsp jaggery sugar
  • 30 g coconut milk
  • 30 g almond paste (see tip) (optional)
  • 1 sprigs coriander leaves, to garnish
