Ingredients

Cheat's puff pastry

  • 100 g unsalted butter, chilled, cut into pieces
  • 2 pinches sea salt
  • 1 tsp lemon juice
  • 50 g chilled water

Frangipane

  • 50 g blanched almonds
  • 40 g caster sugar
  • 50 g unsalted butter, softened
  • 15 g plain flour
  • ¼ tsp baking powder
  • ⅛ tsp natural almond extract (see Tips)
  • 1 egg
  • 2 pinches sea salt

Apple topping

  • 30 g caster sugar
  • 50 g unsalted butter
  • ½ vanilla bean, seeds scraped
  • 2 pinches ground cinnamon
  • 2 - 3 Granny Smith apples, ends trimmed, unpeeled

Assembley

  • plain flour, to dust
  • maple syrup, to glaze
  • ice cream or crème fraiche, to serve
