  • 16 oz zucchini (approx. 3 med), ends trimmed in a circular shape to fit the blade width

  • ½ oz dried porcini mushrooms
  • 9 oz water, divided
  • 20 oz fresh mixed mushrooms, (ie. cremini, maitake, button, shitake), sliced, divided
  • 3 - 5 garlic cloves
  • 1 oz shallot, halved
  • 1 oz extra virgin olive oil, plus 1 tbsp to sauté
  • 2 tbsp tomato paste
  • 1 tsp salt
  • 1 oz Marsala wine
    or 1 oz red wine
  • grated Parmesan cheese, to serve (see Tip)
