Ingredients

  • 15 g porcini mushroom, dried
  • 510 g water, boiling to soak
  • 255 g rice, brown "low GI" (see Tip)
  • water, warm to soak
  • 15 g extra virgin olive oil
  • 270 g leek trimmed, white part only, cut into pieces
  • 2 garlic cloves
  • 100 g oyster mushroom, fresh thinly sliced
  • 200 g fresh brown mushrooms thinly sliced
  • 200 g water
  • 2 tsp vegetable stock paste salt free (see Tip)
  • 3 sprigs thyme, fresh leaves only, plus extra to garnish
  • black pepper, ground to season, to taste
  • 1 teaspoon lemon juice to serve
  • 60 g pecorino grated
