Ingredients

  • 280 g fresh broad beans
    or frozen broad beans (see tip)
  • 500 g water
  • 1 Tbsp coriander seeds
  • 1 Tbsp cumin seeds
  • 1 garlic clove
  • 80 g onions, quartered
  • 10 g fresh flat-leaf parsley, leaves only
  • 5 g fresh mint leaves
  • 240 g tinned chickpeas, drained and rinsed (1 x 400 g tin)
  • 1 Tbsp sesame seeds
  • 1 tsp baking powder
  • 1 tsp fine sea salt, or to taste
  • ½ tsp ground black pepper, or to taste
  • ½ - 1 tsp dried chilli flakes, to taste
  • plain flour, for dusting
    or gram flour, for dusting
  • olive oil, for frying
  • 1 lime, cut in wedges, for serving
