  • 3 garlic cloves
  • 20 g fresh parsley leaves
  • 80 g salted butter, soft
    or 80 g margarine
  • 300 g carrots, cut in pieces
  • 200 g leeks, halved then finely sliced
  • 30 g olive oil
  • 200 g fresh mushrooms, halved if large
  • 240 g plain yoghurt
  • 1 large egg
  • 1 ½ tsp ground turmeric
  • 1 tsp fine sea salt
  • 1 pinch ground black pepper
  • fresh chives, snipped, for garnish
