Ingredients
- 150 g dried rice noodles
- 3 cm piece fresh ginger, peeled
- 2 garlic cloves
- 1 eschalot
- 1 - 2 fresh chillies, trimmed and cut into halves (see Tips)
- 4 sprigs fresh coriander, roots and stalks (see Tips)
- 1 tbsp sesame oil
- 1 jar laksa paste (approx. 220 g - see Tips)
- 2 tsp Chicken stock paste (see Tips)
- 400 g water
- 4 whole eggs
- 6 stalks baby bok choy, leaves and stalks separated and cut into pieces (4-5 cm)
- 200 - 250 g firm white fish fillets, cut into pieces (4 cm)
- 400 g coconut milk
- 2 fresh kaffir lime leaves
- 2 skinless chicken thigh fillets, cut into pieces (4 cm)
- boiling water
- fish sauce, to taste
- lime juice, to taste
- 200 - 250 g medium raw prawns, peeled and deveined
- 2 spring onions/shallots, cut into thin slices for garnishing
- 2 - 4 tbsp fried shallots, for garnishing
- 100 g bean sprouts, for garnishing
- fresh coriander leaves, for garnishing
- 1 lime, cut into quarters, to serve
