  • 1 homemade pasta dough, Gluten-Free Pasta, from Fresh Pasta Homemade
  • 2 oz Parmesan cheese, cubed

Mushrooms

  • 2 garlic cloves
  • 1 oz extra virgin olive oil
  • 24 oz fresh cremini mushrooms, sliced
  • 6 oz fresh shiitake mushrooms, sliced
  • 2 tbsp dried parsley
  • ½ tsp salt
  • 1 pinch ground black pepper

Béchamel Sauce

  • 32 oz whole milk
  • 2 oz cornstarch
  • 1 pinch ground nutmeg
  • ½ tsp salt
  • 1 pinch ground black pepper
  • 2 oz unsalted butter, cubed

ASSEMBLY

  • extra virgin olive oil, to grease
  • 16 oz raclette cheese, deli-sliced or grated
    or 16 oz Gruyère cheese, deli-sliced or grated
