  • 4 - 7 dried red chillies, deseeded, to taste
  • warm water, for soaking
  • 300 g roasted unsalted peanuts
  • 50 g vegetable oil
  • 70 g eschalots
  • 4 garlic cloves
  • 2 ½ cm piece fresh ginger, peeled
  • 2 ½ cm piece fresh galangal, peeled
  • 1 stalk lemongrass, white part only
  • 2 candlenuts (see Tips)
  • 50 g tamarind paste
  • 500 g water
  • 50 g palm sugar
  • 1 tsp salt, to taste
