  • 1 tbsp Sichuan pepper
  • 4 star anise
  • 1 cinnamon stick
  • 1 oz ginger, cut into pieces
  • 1 oz tamari sauce
  • 1 fresh mandarin orange, thin peel only, no pith
  • 1 duck, head/neck, wings and feet trimmed (approx. 4-5 lb)
  • 1 - 2 tsp Chinese five spice

Pancakes

  • 25 ½ oz water, divided
  • 9 oz all-purpose flour, plus extra to dust
  • ⅛ tsp salt
  • sesame oil, to brush
  • sweet plum sauce, to serve
  • 1 English cucumber, thinly sliced in matchsticks (2 in.)
  • 8 green onions, thinly sliced in matchsticks (2 in.)
