Ingredients

Dry Rub

  • 3 dried ancho chilies, de-seeded and de-stemmed
  • 2 dried chipotle chilies
    or 1 tsp chipotle chili powder
  • 1 oz black peppercorns
  • ½ oz brown sugar
  • 1 tbsp onion powder
  • 2 tsp mustard powder
  • 2 tsp dried oregano
  • 1 ½ tsp garlic powder
  • 1 tsp salt, to taste
  • 1 tsp ground cayenne pepper

Brisket

  • 64 - 80 oz beef brisket, untrimmed
  • 16 oz smoked bacon, sliced

BBQ Sauce

  • 6 oz fresh Roma tomatoes, quartered
  • 4 oz white onions, quartered
  • 3 ½ oz brown sugar
  • 3 canned chipotle chilies, in adobo sauce, to taste
  • 2 garlic cloves
  • 2 oz apple cider vinegar
  • 1 oz Worcestershire sauce
  • 1 oz molasses
  • 1 heaping tbsp Dijon mustard
  • ¾ tsp salt, to taste
