Ingredients

Couscous and Mixed Vegetables

  • 150 g hazelnuts
  • 150 g dried apricots
  • 300 g onions, quartered
  • 2 garlic cloves
  • 60 g olive oil
  • 1 tsp fine sea salt
  • 200 g couscous
  • 1 heaped tsp vegetable stock paste, homemade
    or 1 vegetable stock cube (for 0.5 l), crumbled
  • 600 g water
  • 200 g carrots, peeled, cut in slices (5 mm)
  • 200 g courgettes, cut in slices (7-10 mm)
  • 150 g red pepper, cut in bite-size pieces
  • 150 g feta cheese, cut in small cubes (5 mm)
  • 100 g frozen peas

Stracciatella Cream and Couscous Finalisation

  • 100 g caster sugar
  • 4 egg whites
  • 250 g cream cheese
  • 50 g chocolate flakes
  • 1 Tbsp olive oil
  • 50 g feta cheese, cut in small cubes (5 mm)
  • 2 tsp fresh parsley, leaves only, chopped, to garnish (optional)
