  • 1 anchovy fillet
  • 1 tsp fresh thyme, leaves only
  • 2 tbsp extra virgin olive oil, plus extra to brush
  • 1 tsp freshly squeezed lemon juice
  • 1 - 2 pinches ground black pepper, to taste
  • 1 baguette, cut into slices (1 cm thick) and toasted
  • 100 g tomatoes, deseeded and cut into small pieces
  • 5 - 6 fresh basil leaves, torn
  • 80 g feta cheese, crumbled, to serve
