Ingredients

  • 5 g fresh dill, leaves only
  • 230 g leeks, white part only, cut in pieces
  • 45 g olive oil
  • 15 g freshly squeezed lemon juice
  • 1 ¼ tsp salt, plus extra for seasoning
  • ½ tsp ground black pepper, plus 2-3 pinches, plus extra for seasoning
  • 120 g onions, quartered
  • 120 g celery stalks, cut in pieces
  • 2 garlic cloves
  • 4 fresh salmon fillets, skinless (approx. 150 g each, 3 cm thick)
    or 4 white fish fillets, skinless (e.g. sea bass, cod, halibut) (approx. 150 g each, 3 cm thick)
  • 1000 g water
  • 300 g courgettes, cubed (2-3 cm)
  • 1 ½ - 2 vegetable stock cube (for 0.5 l), crumbled, or to taste
    or 1 ½ tsp vegetable stock paste
  • 1 tsp ground turmeric
  • 50 g orzo
  • 400 g potatoes, peeled, cut in pieces (2 cm)
  • 5 g lemon zest, preferably organic
  • 60 g unsalted butter, cut in pieces
  • 40 g white wine
  • 50 g whipping cream
  • 1 Tbsp plain flour
