Ingredients

  • 4 ½ oz all-purpose flour

Rice

  • 10 oz long-grain rice
  • 35 oz water
  • 1 tsp salt

Gumbo

  • 4 garlic cloves
  • 1 oz fresh parsley, leaves and tender stems
  • 5 sprigs fresh thyme, leaves only
  • 4 oz yellow onions, quartered
  • 4 oz green bell peppers, cored and cut into pieces (1 in.)
  • 4 oz celery, cut into pieces (½ in.)
  • 1 oz extra virgin olive oil
  • 1 - 2 tbsp Cajun spice mix
  • 3 dried bay leaves
  • 6 oz vegetable oil
  • 28 oz chicken stock
  • 4 tsp chicken stock paste (see Tip) (optional)
  • 16 oz chicken thighs, boneless and skinless, halved
  • 6 oz andouille sausage, pre-cooked, sliced in rounds (1 in.)
  • ½ - 1 tsp salt, to taste
  • ½ tsp ground black pepper, to taste
  • 3 green onions, sliced, to serve
