Ingredients

Spicy Rub

  • 1800 g beef short ribs, bone in (8-10 cm)
  • 2 tbsp dark brown sugar
  • 2 tbsp chilli powder
  • 1 tsp paprika
  • 1 tsp sea salt
  • 1 tsp black peppercorns
  • 1 ½ tsp onion powder
  • ½ tsp granulated garlic
  • ½ tsp dried thyme
  • ½ tsp cumin seeds
  • ¼ tsp cayenne pepper
  • 2 whole cloves

Sweet barbecue sauce

  • 1 red onion, cut into quarters
  • 1 garlic clove
  • 210 g tomato sauce
  • 120 g dark brown sugar
  • 60 g pineapple juice (see Tips)
  • 60 g honey
  • 1 tsp paprika
  • ½ tsp sea salt
  • ½ tsp ground black pepper
  • ¼ tsp ground cayenne pepper
  • 1 ½ tsp Worcestershire sauce
  • 1 ½ tsp Dijon mustard
  • 1200 g water

Polenta

  • 150 g Gouda cheese, cubed (3 cm pieces)
  • 2 garlic cloves
  • 20 g unsalted butter
  • 900 g water
  • 130 g polenta
  • 1 tsp sea salt
  • 70 g unsalted butter, cut into pieces
  • spring onions/shallots, julienned, to garnish
