Ingredients

  • 1 ½ oz yellow onions, quartered
  • 1 garlic clove
  • 1 sprig fresh flat leaf parsley, leaves only
  • 1 sprig fresh basil, leaves only, plus extra to garnish
  • ¼ - ½ fresh chili, seeds removed if preferred, plus extra to serve, (e.g. serrano)
  • 2 oz sun-dried tomatoes, in oil, lightly drained
  • ½ oz unsalted butter
  • 9 - 10 oz chicken breast fillets, skinless, in pieces (½ - ¾ in.)
  • 4 ½ oz heavy whipping cream
  • 6 ½ oz water
  • 1 ½ oz dry white wine
  • 2 tsp chicken stock paste (see Tip)
  • 4 ½ oz penne pasta
