  • 10 g extra virgin olive oil plus extra to grease
  • 50 g Gruyère cheese or Parmesan cheese, cut in to pieces (2 cm)
  • 500 g cottage cheese
  • 4 eggs
  • ½ tsp ground black pepper plus extra to season
  • ⅓ tsp sea salt plus extra to season
  • 100 g brown onion cut into quarters
  • 3 garlic cloves
  • 100 g white wine
  • 400 g canned chopped tomatoes
  • 50 g tomato paste
  • 1 tbsp Meat stock paste (see Tips)
  • 1 tsp dried Italian herbs
  • 500 g turkey mince broken into pieces
  • 200 g fresh button mushrooms sliced
  • 200 g fresh baby spinach leaves
  • 120 g walnuts
  • 1 lemon juice only
