Ingredients

Lemon Feta Topping

  • 1 organic lemon (approx. 5 oz), thin peel only, no pith
  • 1 tsp ground black pepper
  • 7 oz Danish feta cheese, cut into pieces (¾ in.)
  • 1 oz freshly squeezed lemon juice (approx. ½ lemon)
  • 2 oz extra virgin olive oil

Beef Chili

  • 5 garlic cloves
  • 3 ½ oz yellow onion, cut into quarters
  • ½ - 1 fresh chili, seeds removed, if preferred (e.g. serrano)
  • 1 oz extra virgin olive oil
  • ½ tsp ground cumin
  • 1 tbsp ground paprika
  • ½ tsp ground turmeric
  • ½ tsp ground cayenne pepper
  • ½ tsp ground cinnamon
  • 1 tsp ground coriander
  • 1 - 1 ½ tsp salt, to taste
  • 2 oz tomato paste
  • 1 can whole tomatoes (approx. 14.5 oz)
  • 1 can tomato sauce (approx. 14.5 oz)
  • 1 tbsp dark brown sugar
  • 40 oz sirloin steak, cut into pieces (¾ - 1 ¼ in.)
  • 1 can red kidney beans (approx. 15 oz), rinsed and drained
  • 2 - 3 sprigs fresh cilantro, leaves only, to garnish
