Ingredients

  • 100 g dried lima beans
  • 800 g water plus extra for soaking
  • 1 garlic clove
  • 1 brown onion cut into quarters
  • 1 celery stalk cut into pieces (4 cm)
  • 1 carrot spiralised or cut into julienne, core reserved and cut into pieces (4 cm) (see Tips)
  • 400 g canned diced tomatoes
  • 1 tsp Vegetable stock paste (see Tips)
  • ½ parsnip (approx. 100 g), spiralised or cut into julienne
  • 1 tsp salt
  • ¼ tsp ground black pepper
  • 1 zucchini (approx. 200 g), spiralised or cut into julienne
  • ½ lemon juice only, to taste
  • 8 sprigs fresh coriander leaves only
  • 8 sprigs fresh dill leaves only
