  • 50 g stale white bread cut into pieces
  • 30 - 50 g milk for soaking the bread
  • 40 g Parmesan cheese cut into pieces (3 cm)
  • 300 g turkey breast fillet, skinless cut into pieces
  • 150 g lentils, canned drained (weight after draining) (see tip)
  • 2 eggs
  • 50 g pancetta cut into pieces
    or 50 g bacon cut into pieces
  • 1 pinch fine salt
  • 80 g plain flour
  • oil for deep-frying
