Ingredients

Bot chien (rice flour cake)

  • 1 tsp vegetable oil, plus extra for greasing
  • 1120 g water
  • 210 g rice flour
  • 1 tbsp arrowroot flour
  • ¼ tsp salt

Pickled vegetables

  • 100 g white wine vinegar
  • 70 g sugar
  • ½ tsp salt
  • 50 g carrot, peeled into ribbons
  • 50 g daikon, peeled into ribbons

Dipping sauce

  • 1 fresh long red chilli, trimmed, deseeded if preferred and cut into halves
  • 2 tbsp soy sauce
  • 1 tbsp Chinese black vinegar
  • 1 tbsp caster sugar

Assembly

  • 2 tsp soy sauce
  • 2 tsp vegetable oil
  • 4 eggs
  • 2 spring onions/shallots, trimmed and cut into thin slices
