  • 2 sprigs parsley, leaves only
  • 16 oz lamb shoulder, partially frozen, cut into pieces (1 in.), divided
  • 1 large egg
  • ½ tsp prepared horseradish
  • ½ tsp ground cumin
  • ½ tsp ground coriander
  • ½ tsp mustard
  • 2 oz bread crumbs

Yogurt Mint Dressing

  • 1 garlic clove
  • 20 mint leaves, fresh
  • 4 oz plain yogurt
    or 4 oz plain Greek yogurt
  • 1 tsp lemon juice
  • ¼ tsp ground cumin
  • ½ tsp salt
  • ⅛ heaping tsp freshly ground black pepper
