  • 2 oz yellow onions, cut into pieces
  • 1 garlic clove
  • 1 oz all-purpose flour
  • ½ oz extra virgin olive oil
  • ½ oz unsalted butter, cubed
  • 4 oz red wine
  • 20 oz beef broth
  • 1 oz Worcestershire sauce
  • 5 sprigs fresh thyme, leaves only, plus extra to garnish
  • 8 oz cremini mushrooms, thinly sliced
