  • 8 oz onions, quartered
  • 1 oz unsalted butter plus 1 heaping tbsp, room temperature
  • 8 chicken thighs, skin on and bone in
    or 1 whole chicken (3-4 lb), cut into pieces
  • 8 oz bacon, unsmoked, in pieces (1 in.)
  • 8 oz carrots, peeled, in rounds (½ in.)
  • 8 oz cremini mushrooms, trimmed, halved or quartered, if large
  • 1 tsp salt
  • 1 tsp freshly ground black pepper, to taste
  • 1 bottle red wine (725 ml)
  • 2 garlic cloves, crushed
  • 2 sprigs fresh thyme
  • 2 dried bay leaves
  • 1 tbsp all-purpose flour
  • ½ oz fresh parsley, chopped
  • mashed potatoes, to serve
    or cooked pasta noodles, to serve
