Ingredients

  • 1 garlic clove
  • 80 g onions, quartered
  • 1 red chilli, mild, deseeded, cut in pieces (optional)
  • 30 g unsalted butter, diced
  • 100 g potatoes, cut in pieces
  • 300 g broccoli, florets and stalks, cut in pieces (see tip)
  • 700 g water
  • 1 vegetable stock cube (for 0.5 l), crumbled
    or 1 heaped tsp vegetable stock paste, homemade
  • 1 ½ - 2 tsp salt, to taste
  • 100 g bread, diced (approx. 1-2 cm)
  • 1 - 2 tsp olive oil
  • 60 - 80 g Gorgonzola dolce (soft), crumbled, plus extra for serving (optional)
    or Cheddar cheese, cut in pieces
